A santoku is a Japanese all-purpose kitchen knife. Like a chef's knife, the santoku is used for just about every cutting job in the kitchen. The name means “three virtues" and may refer to the three types of foods it works well with—vegetables, proteins, and fruit. This santoku also features hollow-ground indentations on the blade to help reduce friction so the blade glides through the food more easily. When we first introduced the Shun Classic Hollow Ground Santoku to the market, it was named “Kitchen Knife of the Year" by BLADE MAGAZINE.

The Meridian Elité Kullenschliff Santoku Knife is a Japanese chef's knife with the same versatility found in a traditional chef's knife. It has a thin taper for maximum precision when slicing vegetables, fish and meat. The kullens (semi-circular hollows on either side of the blade) reduce drag and ease the cutting and separation of meats, cheese and vegetables. The blade and handle are compatible in width and weight, resulting in a well-balanced knife.
FEATURES
The German 1.4116 stainless carbon alloy blade resists stains and corrosion, exhibits toughness and durability, holds its edge retention, and is easy to re-sharpen to a razor-like edge.
This knife line is one-piece, hot-drop hammer forged, which produces the strongest blade from heel to tip. The blades are heat treated and cooled to achieve a Rockwell of 57-58.
The three-step, 15° Elité edge is hand stropped on a cloth wheel, creating the sharpest possible cutting surface on an edged tool.
The bolsterless heel simplifies all cutting, sharpening and honing tasks, making use of the entire blade from heel to tip.
Handcrafted in the historic cutlery capital of Solingen, Germany.
The Knife for Life™ guarantee provides a lifetime warranty against material and manufacturing defects.
100% Messermeister quality

Cut thin, even slices every time. With the Shun Premier Slicing Knife's longer length, narrower blade, and Shun-sharp edge, you can make long, even slices without tearing or sawing. This kind of clean cut keeps more of the meat juices—and thus more of the flavor—inside the meat. The Shun Premier Slicing Knife's 9-inch blade means you can cut slices with a single, long stroke. The narrow profile and razor-sharp Shun edge let the blade glide through the meat with less friction so each slice is perfect. Ideal for slicing a wide variety of meats, the Shun Premier Slicing Knife can also be used to cut larger vegetables.

If you bake or buy whole loaves of bread, a bread knife will be one of the most-used knives in your kitchen. Whether you love wonderfully crusty or delicately tender bread, the Shun Premier Bread Knife will be your loaf's new best friend, no matter what its texture. The key is Shun's razor-sharp, wide, “low frequency” serrations. Unlike a plain-edged knife, the serrations let you gently saw through the bread without crushing and with much less crumbing. Unlike sawtooth serrations that are spaced closer together, the Shun Premier Bread Knife's wide serrations will gently glide through the bread without tearing. This keeps the bread's texture intact and enhances eating pleasure. Cakes and pastries also benefit from the Shun Premier Bread Knife's smooth cutting capabilities.
Whether your bread it crusty or tender, this knife cuts without tearing or crushing—and looks beautiful doing it

Your chef's knife will be the most-used knife in your kitchen, so you want to find the one that feels like an extension of your arm. The beautiful Shun Premier 8-in. Chef's Knife could be the one. This breathtaking knife is lightweight, agile, and offers an extremely comfortable grip. In fact, Shun Premier's thinner blades makes this chef's knife lighter and less tiring to use than comparable European-style chef's knives. The 8-in. length and razor-sharp edge are perfect for slicing and dicing a full range of foods. The wide blade keeps knuckles off the cutting board and comes in extra handy when transferring cut food from board to pan. With its curved belly, the Chef's knife can be gently rocked through fresh herbs or spices to produce a very fine mince.
